Shrimp & Pesto Pizza

This pizza is a good variation on a traditional friday night pizza.  I used an easy homemade crust recipe, but you could use pre-made or whatever special recipe you have.


3/4 cup shrimp (you can use pre-cooked or fresh)
1/4 cup pesto
1/4 cup caramelized onions & peppers (I used Marazetti jarred)
1 small tomato, sliced
4 oz mozzarella cheese
1 tbl butter
1 tbl garlic

Cook or prepare the pizza crust you choose to use.

Melt butter and garlic in a saute pan.  Add the shrimp & and the peppers/onions (cook time will vary depending on whether your shrimp is pre-cooked or raw) heat until warm.

If your pesto is kept in the refrigerator set it on top of the heating oven or in the microwave for a few seconds to soften it and make it easier for spreading.  Spread the pesto over the prepared crust.

Spread your shrimp, pepper and onion mixture over the pesto crust.  Then add sliced tomato and cheese.

Cook the pizza until cheese is melted.
