Pineapple Sorbet


A Super simple alternative to ice cream.  I only used about 2 TBL of sugar because my pineapple was really ripe and sweet.  Do not skip the second round of blending.  After chilling the pineapple puree gets a strange foamy texture, the second blend (or ice cream maker) gets rid of that.  Enjoy!

ingredients:

1/2 pineapple, peeled and cored (2 cups pineapple chunks)
8 tablespoons granulated sugar (varies)
1/2 Cup water

directions:

1. Cut the pineapple into chunks and puree in a blender with granulated sugar and water. Mix until smooth.
2. Chill the pineapple mixture in the freezer for 1-2 hours.  Remove from the freezer and return to the blender (or ice cream maker if you have one).  Return to the freezer and chill until set.
