Kielbasa and Sauerkraut

2 lbs smoked kielbasa
2 lbs polish kielbasa
2 Large (28 oz cans) sauerkraut
1 box brown sugar
1 lb bacon

Empty sauerkraut into strainer.  Rinse and let drain until waste water comes out clear.  This can take an hour or so to get all of the liquid out.

Chop bacon into small pieces.  In the largest frying pan you own, cook until crispy, use a slotted spoon to set on paper towel and let drain.  Do NOT dispose of bacon grease!  Add about half of the sauerkraut (if you do not have a large frying pan you may just need to have more batches) to the bacon grease.  Cook about 5 minutes until it has reduced in size.  Add brown sugar to taste (usually about half of the box).  Empty Sauerkraut into crock pot.  Slice Kielbasa into bite sized pieces (size is really your choice) and put in the frying pan.  This is fully cooked, so you are just warming, cook about 4 minutes.  Use slotted spoon to add kielbasa to crock pot, do NOT dispose of kielbasa grease.  Add second batch of sauerkraut to kielbasa grease and follow the same procedures as before.  Add to crock pot and add bacon as well, season with salt and pepper.  Serve immediately or set crock pot on "warm" to keep warm until ready to serve.

*This recipe makes a 6 quart crock pot.   Adjust as needed.
*You can also put this in a baking pan and keep warm in the oven.
