1 box plain couscous
1 can chicken broth
1 jar artichokes (in water or oil, your choice)
3 oz feta cheese
1 small can green olives
1 small can black olives
3 oz sundried tomatoes
4 green onions
1 tsp parsley
1 tsp oregano
1/4 c greek salad dressing
salt & pepper
Cook couscous according to package directions and substituting chicken broth for water.
Meanwhile, in a bowl combine chopped artichokes, feta cheese, sliced green olives, sliced black olives, chopped sun-dried tomatoes, chopped green onions, parley, oregano, and salad dressing. Add couscous to mixture and combine. Add salt and pepper to taste.
*Feel free to substitute/add ingredients, this is a very forgiving dish. If you love feta cheese then add more, I always do, if your couscous seems a little dry add some more dressing, etc.
*I love to get the olive/feta mixture in the salad bar by the pickles. These are greek olives and have a much stronger flavor, not to mention they have great seasoning.
*I have also used Kraft low-fat sun-dried tomato dressing in place of greek dressing, this is also very good.
*We love to add grilled or sauteed chicken or chick peas for a full meal.
