One pot mushroom zucchini pasta

This is easy & fabulous!  I made some adjustments to the original recipe I found online, they are reflected here, including cutting the recipe in half to make it more manageable for two people to eat.  This version Makes 3 good size servings if you are having a side dish, if this is the only item being served it probably more like two large servings.

  • 1/2 pound linguini
  • 1/2 pound mushrooms, thinly sliced
  • 1 zucchini, thinly sliced and quartered
  • 2/3 cup frozen peas
  • 2 cloves garlic, minced
  • 2 bullion cubes
  • 2.25 cup water
  • salt, black pepper, italian seasoning to taste
  • 1/3 cup Parmesan cheese
  • 1/4 cup mozarella
  • 1/4 cup milk

- add first 8 ingredients to pot (I recommend breaking pasta in half and placing in the pot first to make sure it gets covered with water).

- bring to boil, then simmer uncovered for about 10 minutes. Watch the final minutes until the liquid is absorbed, it varies depending on the heat & you don't want to burn!  Mix a couple of times to make sure all the noodles get some water.

- add milk & cheeses at very end & heat until melted & liquid is absorbed, 2-3 minutes.

- serve immediately!
