Baked Garlic Potato Slices

  • 2-4 Whole potatoes;
  • salt;
  • olive oil;
  • finely chopped garlic;
  • herbs and spices (I used pepper & parsley)
Directions:

Preheat oven to 400 deg F.

Slice potatoes into desired thickness. Thinner is crispier is better. Try to get them the same size, it does have an effect on cooking evenly.

Next, rinse potatoes with water to remove starch. Dry with paper towel.

In a large bowl, mix olive oil, salt, chopped garlic, and your choice of herbs. Add the potatoes and continue to mix until each slice is evenly coated.

Place each slice of potato in a baking pan. Stick pan in the oven. Turn potatoes every 15 minutes until golden brown.  Took about 30 minutes, but like I said, the uneven thickness caused uneven cooking.

Some were crispy like chips, some more like a French fry...either way dipped in catsup they were yummy!
